Looking for a rainy day winter warmer? Look no further than this mild stew with few essential ingredients. The original recipe that I have used with very slight adjustments comes from Healthier Steps.
INGREDIENTS:
- 400 gm okra (ladies fingers), bought from LokChan (SEK25 per 200g)
- 1 tbsp olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 0.5 tsp dried thyme
- 0.5 tsp dried paprika powder
- 0.75 tsp salt
- 4-5 medium tomatoes, chopped
- 0.5 cups water
- pepper to taste
METHOD:
- Heat oil in a large saucepan over medium-high heat, add onions and saute until translucent and soft (about 3 minutes)
- Add garlic and thyme, cook for 1 minute stirring constantly. Stir in tomatoes and cook for 5 minutes stirring constantly
- Stir in okras, paprika powder, salt, pepper and water
- Cover saucepan and cook for 15 - 20 minutes
- Serve with brown rice
