Recipe: Simple Vegan Stewed Okra (Ladies Fingers) with Tomatoes


Looking for a rainy day winter warmer? Look no further than this mild stew with few essential ingredients. The original recipe that I have used with very slight adjustments comes from Healthier Steps.

INGREDIENTS:
  • 400 gm okra (ladies fingers), bought from LokChan (SEK25 per 200g)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 0.5 tsp dried thyme
  • 0.5 tsp dried paprika powder
  • 0.75 tsp salt 
  • 4-5 medium tomatoes, chopped
  • 0.5 cups water 
  • pepper to taste 
METHOD:
  1. Heat oil in a large saucepan over medium-high heat, add onions and saute until translucent and soft (about 3 minutes) 
  2. Add garlic and thyme, cook for 1 minute stirring constantly. Stir in tomatoes and cook for 5 minutes stirring constantly
  3. Stir in okras, paprika powder, salt, pepper and water
  4. Cover saucepan and cook for 15 - 20 minutes
  5. Serve with brown rice
