Recipe: Super Simple Vegan Chickpea Salad


I've been meaning to make this salad for ages! It's the perfect complement to a meal, or a meal in its own right - flavoursome and nutritious. The chickpeas make it filling and the avocado + coriander + garlic give it a guacamole feel. This salad brings a summery feel to winter! 

INGREDIENTS:

  • 1 avocado
  • 0.5 red onion
  • 1 (large) cucumber
  • 1 carrot
  • 1 lime (juiced)
  • 1 can chickpeas, drained
  • Coriander (handful)
  • Salt
  • Pepper
  • 1 clove garlic (minced)

METHOD:

1. Mash the avocado in a large mixing bowl and mix in the lime juice and garlic
2. Remove the coriander leaves from the stalks. Discard stalks, finely chop the leaves. Mix into the avocado.
3. Finely dice the onion and mix into the avocado
4. Grate or julienne the carrot, cut up cucumber into small pieces and mix into the avocado
5. Mix in the chickpeas and add salt and pepper to taste

Makes 3-4 large servings of salad.
