Today: Re-inventing Tofu Scramble, Sun and Fika with Mentors!

Who doesn't love putting out some feelers to make regular recipes that little but more creative! I love the vegan scrambled eggs made from tofu so much that I've been eating it almost everyday. It's my new go-to but I've been looking at different ways of including more things in the mix so it lasts longer than a meal or two!

Ta-da! My creation from today:

Added Ingredients: (all purchased from ICA)
  • 1 bunch kale (chopped) 
  • 8x cherry tomatoes (halved)
  • 2x large champion mushrooms 
  • 1 carton mixed beans
I LOVE how ICA stocks beans, chickpeas and lentils among other pantry essentials in these groovy little cartons. 

I had lunch on the balcony with two other corridor-mates - the sun shone and radiated heat as well as light today! Unusually bright and sunny.

Fika with Mentors @ Hoppipolla Cafe 15:00
 Matcha latte with steamed almond milk SEK42
It wasn't sweet at all and had a savoury taste which was refreshing and energising. It's definitely not bitter like your typical matcha tea, but the almond milk has this delightful balance between the matcha flavour and adding just that touch of savoury nuttiness. 

I couldn't resist the cakes at Hoppipolla! This time I ordered a "pear, chocolate and vanilla" cake that came with some hardened caramel on top. (SEK35)

Four mentors and two other mentees joined us for a cosy fika catch up. We spoke about classes, settling in, things we as mentors could do as a group and shared random anecdotes about life in Lund! What a boost, I love my mentor group <3
