Hazelnut and Walnut Chocolate Cookies Dusted with Coconut

Love me some vegan baked goods with simple recipes! Tonight a small group of about 12 students - including a mix of Swedish, international, exchange, bachelor's and master's students all congregated to make some delightful sweet treats - chocolate cookies and kladdkaka.
The setup
We split up into two groups - one to make the cookies and the other for the kladdkaka. I was part of the group that made the kladdkaka - both recipes were incredibly simple but I wanted to create kladdkaka since I've eaten my fair share of it already.
INGREDIENTS:
- 130gm vegan butter
- 100gm vegan chocolate
- 180gm wheat flour
- 2 cups powdered sugar
- 1tsp vanilla sugar
- 0.5 cup cocoa
- 1.5 cups vegan milk (oat or soy milk)
METHOD:
- Melt the butter. After the butter is runny, stir in cocoa powder
- In a separate bowl, mix wheat flour, powdered sugar, vanilla sugar and cocoa. After this has been mixed, add in the milk and stir together. Make sure there are no lumps!
- Add in the butter and cocoa powder into the mix
- Bake in the oven for 15 minutes at 175C
- Cut up and serve!

Hazelnut and Walnut Chocolate Cookie Recipe:
INGREDIENTS:
- 2 cups oat flour
- 0.5 cup cocoa powder
- 0.25 cups oil
- 0.25 cup syrup
- 0.25 cup oat milk
- 1 tsp baking powder
- Walnuts, hazelnuts, to taste
METHOD:
- Combine all the ingredients listed above together and mix well
- Add in the nuts to the mixture
- Mould cookie shapes about 3cm in diameter and bake for 10 minutes at 180C
- If you feel like it, let the cookies rest for about 5 minutes before serving (but you can dig in immediately!)
