Hazelnut and Walnut Chocolate Cookies Dusted with Coconut

Love me some vegan baked goods with simple recipes! Tonight a small group of about 12 students - including a mix of Swedish, international, exchange, bachelor's and master's students all congregated to make some delightful sweet treats - chocolate cookies and kladdkaka.

 The setup

We split up into two groups - one to make the cookies and the other for the kladdkaka. I was part of the group that made the kladdkaka - both recipes were incredibly simple but I wanted to create kladdkaka since I've eaten my fair share of it already. 

INGREDIENTS:
  • 130gm vegan butter
  • 100gm vegan chocolate
  • 180gm wheat flour 
  • 2 cups powdered sugar
  • 1tsp vanilla sugar
  • 0.5 cup cocoa
  • 1.5 cups vegan milk (oat or soy milk)
METHOD:
  1. Melt the butter. After the butter is runny, stir in cocoa powder 
  2. In a separate bowl, mix wheat flour, powdered sugar, vanilla sugar and cocoa. After this has been mixed, add in the milk and stir together. Make sure there are no lumps!
  3. Add in the butter and cocoa powder into the mix 
  4. Bake in the oven for 15 minutes at 175C 
  5. Cut up and serve!

Hazelnut and Walnut Chocolate Cookie Recipe


INGREDIENTS:
  • 2 cups oat flour
  • 0.5 cup cocoa powder
  • 0.25 cups oil
  • 0.25 cup syrup 
  • 0.25 cup oat milk
  • 1 tsp baking powder
  • Walnuts, hazelnuts, to taste

METHOD:
  1. Combine all the ingredients listed above together and mix well
  2. Add in the nuts to the mixture 
  3. Mould cookie shapes about 3cm in diameter and bake for 10 minutes at 180C
  4. If you feel like it, let the cookies rest for about 5 minutes before serving (but you can dig in immediately!)
