It's the second-last seminar for SASH68 Critical Animal Studies on this week and since it's my favourite course where I've made the closest friends, I'm going to surprise the class by baking and providing some fika while we watch A Peaceable Kingdom after the lecture.
You may or may not remember my super simple banana muffins - really this post is just to share pretty pictures of my latest baking frenzy: but veganised in the best way!
To replace 1 egg you need:
- 2 tbsp water
- 1 tsp oil
- 2 tsp baking powder
And it works like magic! The muffins rose a lot more than usual but I reckon they look even more adorable - like little souffles! I poked a raspberry in the centre of each muffin before baking, and although they didn't centre themselves completely I'm just so proud! They look (and taste) fantastic!
Edit: I ended up eating all of the muffins (and giving a couple away to friends) so I rocked up to class with a classic vegan kladdkaka instead. Heaps easier to transport - just more space efficient, but no less well-received!
