Recipe: Vegan Chocolate Mousse

Wow. This recipe is amazing: just three ingredients and it is so, so simple. My housemate and I did a bake night and made it together - a quick and fun way to bond with the dessert reading in an hour.

INGREDIENTS:
  • 1 carton (380 gm) of chickpea water (aquafaba)
  • 1 block of vegan dark chocolate (100 gm should do it) 
  • 1 tsp of vanilla sugar (optional) 
METHOD:
  1. Break the dark chocolate into small blocks and place into a small pot. Place the small pot into a water bath and bring the water to an almost-boil (medium-high heat, do not bring the water to a boil because you want to avoid steam condensing in the chocolate). 
  2. In the mean time, use an electric mixer to beat the aquafaba. It should turn white, rise and exceptionally light and fluffy - do this for about 3-4 minutes. 
  3. Remove melted chocolate from the water bath. Pour the fluffy aquafaba into the chocolate in stages (I think 3 works well) and mix in well. 
  4. Pour the mixture into a container and place in the fridge to set. 
  5. After 1 hour (minimum, but preferably overnight) you can dig in - serve as is, or with fresh berries. Enjoy!
It's so light and fluffy - perfection itself!
