This is my super lazy recipe. I don't even think it's really a recipe, since it's mostly just throwing some veggies and tofu together, but whatever! It's simple, clean, filling and delicious, a perfect dinner to a heavy brunch or post-decadent fika.
- 1x packet of soja and basilika tofu from ICA
- 2x handfuls of baby spinach
- 1x punnet of cherry tomatoes
- salt and pepper to taste
- (optional) 1tsp vegan butter

METHOD:
- If using, heat and melt vegan butter in a fry pan
- Slice tofu and tomatoes into whatever shape you desire
- Place tofu in the pan and lightly fry for 1-2 minutes
- Add spinach and tomato slices, braise slightly
- Sprinkle salt and pepper to taste
