Recipe: Simple Basil Tofu, Spinach and Tomato Salad

This is my super lazy recipe. I don't even think it's really a recipe, since it's mostly just throwing some veggies and tofu together, but whatever! It's simple, clean, filling and delicious, a perfect dinner to a heavy brunch or post-decadent fika. 

INGREDIENTS:
  • 1x packet of soja and basilika tofu from ICA
  • 2x handfuls of baby spinach
  • 1x punnet of cherry tomatoes 
  • salt and pepper to taste 
  • (optional) 1tsp vegan butter 
"Sojabasilika tofu" SEK19.90

METHOD:
  1. If using, heat and melt vegan butter in a fry pan 
  2. Slice tofu and tomatoes into whatever shape you desire
  3. Place tofu in the pan and lightly fry for 1-2 minutes 
  4. Add spinach and tomato slices, braise slightly 
  5. Sprinkle salt and pepper to taste
