The recipe I've just slightly adapted here is originally from The Woks of Life.
INGREDIENTS:
- 250 gm bamboo shoots
- 1 tbsp vegetable oil
- 4 slices of ginger
- 1 tsp raw sugar
- 1 tsp Shaoxing wine
- 1 tsp light mushroom soy sauce
- 0.5 cup water
I use this Shaoxing wine and soy sauce! The Shaoxing wine was bought in Malmo (no store in Lund stocks it due to the alcohol content) and the soy sauce from ICA.
- Heat the oil in a large saucepan over medium heat
- Add ginger and cook for about 30 seconds, until fragrant. Turn down the heat, add sugar and dissolve it completely
- Add bamboo then turn up the heat, stirring to mix everything well. Cook until the edges of the bamboo have browned a little
- Add the Shaoxing wine, light soy sauce and water. Stir well to combine, then cover and simmer for 10 minutes over medium heat.
- Uncover the pan, turn up the heat to reduce liquid before serving.
