Recipe: Delicious Apple and Oat Cookies

I've just been craving something sweet but not overly decadent - these cookies are perfect! They're filling and taste just as good fresh out of the oven or when cooled. My Swedish housemate who tried one said "they taste just like apple pie - they're really good!" 

This recipe both originates from and was also inspired by the Heart Foundation Australia.

INGREDIENTS:
  • 1 tsp baking powder
  • 1 cup (250 ml) all purpose flour (the Heart Foundation recommends wholemeal plain flour)
  • 1 cup (250 ml) oats (recommended: rolled)
  • 0.5 cup (125 ml) desiccated coconut 
  • 0.25 cup (~65 ml) pumpkin seeds 
  • 0.75 cup ( ~187.5 ml) dried cranberries
  • 1.5 tsp cinnamon
  • 0.5 tsp vanilla extract/essence 
  • 3 small green (Granny Smith) apples, grated with core removed
  • 0.5 (125 ml) cup olive oil 
  • 2 tbsp maple syrup
METHOD:
  1. Preheat an oven to 180 C. Line a large baking tray with baking paper or aluminium foil and set aside. 
  2. In a large bowl, mix baking powder, flour, oats, coconut, pumpkin seeds, dried cranberries and cinnamon together. 
  3. In a separate large bowl, mix grated apple, olive oil, vanilla extract and maple syrup.
  4. Add wet ingredients to dry ingredients, stirring to combine. Mix well. 
  5. In the palm of your hand gather together the dough and shape into balls before pressing to make vaguely-circular cookies approximately 1 cm thick.
    Note: the cookies will not expand too much so however big you make them prior to placing them in the oven will be the size they will be after baking. 
  6. Bake for 15 minutes, or until lightly browned.
