Recipe: Swedish Chokladbollar (Vegan!)

These are hands down my favourite, favourite Swedish snack! They are super easy to make, a no-bake idiot proof vegan snack that will go down well with anyone.


INGREDIENTS:
  • 300 ml oats
  • 100 gm vegan butter/margarine  
  • 100 ml sugar (preferably caster)
  • 1 tsp vanilla extract or powder (sugar) 
  • 3 - 4 tbsp cocoa powder 
  • 2 - 3 tbsp (preferably cold) black coffee 
  • desiccated coconut (outer coating)
METHOD:
  1. Combine all the ingredients except for the coconut into a large bowl and mix the "dough" together using your hands. If the dough is too dry, add more butter. The dough should reach a sticky consistency and not crumble when melded together. 
  2. Shape the dough into balls about 2-2.5 cm thick and then coat with desiccated coconut. 
  3. Place chocolate balls in the freezer for 20 mins before serving, or place in the fridge for 2-3 hours before serving.
  4. Enjoy!
