Serves 1
INGREDIENTS:
- 1-2 tsp vegan butter
- 1-2 tsp garlic, minced
- 1 bunch red-skinned radishes, ends trimmed and quartered (halved if radishes are small, around 1-1.5 cm radius)
- 2-3 leaves of kale
- handful baby spinach leaves
- salt + pepper to taste
- Heat vegan butter on highest temperature until melted and frothing
- Add garlic and fry a little until fragrant
- Add radishes, ensure the inside/whites of the radish are turned on the pan
- Sear radishes - ensure that they're a little bit burnt/yellowed on each side before adding kale and spinach.
- Let the greens wilt a little before removing from heat and adding salt and pepper to taste
