Recipe: Red-Skinned Radish & Kale+Spinach Stir-Fry


Serves 1
INGREDIENTS:

  • 1-2 tsp vegan butter 
  • 1-2 tsp garlic, minced
  • 1 bunch red-skinned radishes, ends trimmed and quartered (halved if radishes are small, around 1-1.5 cm radius) 
  • 2-3 leaves of kale 
  • handful baby spinach leaves
  • salt + pepper to taste
METHOD:

  1. Heat vegan butter on highest temperature until melted and frothing
  2. Add garlic and fry a little until fragrant
  3. Add radishes, ensure the inside/whites of the radish are turned on the pan
  4. Sear radishes - ensure that they're a little bit burnt/yellowed on each side before adding kale and spinach.
  5. Let the greens wilt a little before removing from heat and adding salt and pepper to taste
