Recipe: Vegan Sandwich Cake

A close Swedish friend of mine hosted a combined birthday and house-warming party last night and made this delicious vegan sandwich cake (or  "smörgåstårta" in Swedish). It was absolutely delicious and I can't wait to try making it (an of course eating it again!)

INGREDIENTS:
Filling: called "mom's smack"

  • 150 gm solid natural tofu
  • 1 small red onion, for milder flavour use leek
  • 1 avocado
  • 2-3 tbsp seaweed
  • 50 ml finely chopped dill
  • 50 ml vegan creme fraiche 
  • 100-150 ml vegan mayonnaise
  • lime juice (to taste) 
  • salt + pepper (to taste)

Sandwich cake:

  • 12 slices of brown bread 
  • 150 gm vegan cream cheese
  • 100 ml vegan mayonnaise
  • 1 cucumber 
  • handful of rocket 
  • 1 lemon
  • 1 lime 
  • pomegranate seeds 
METHOD: 
Filling:
  1. Cut tofu and avocado into 1 x 1 cm pieces 
  2. Mince red onion
  3. Place tofu, avocado and red onion in a bowl before mixing in red onion and dill. Mix.
  4. Add creme fraiche, mayonnaise, salt and pepper and mix until all ingredients are evenly distributed. Taste and season with a little more lime juice if needed.
Cake: 
  1. Slice off the crusts of the bread slices 
  2. Place four slices of bread in a square and spread on the filing in a thick layer 
  3. Repeat step 2 with new slices of bread + filling
  4. Mix cream cheese and mayonnaise into a smooth cream and spread over the surface of the cke 
  5. Set cake in refrigerator (overnight)
  6. Decorate cake with sliced cucumber, rocket (arugula), lemon, lime and pomegranate molasses
 Yum... a party's not a party without cake!
